Baked Salmon with Avocado Mango Salsa

 

Baked Salmon with Avocado and Mango Salad

Ingredients:

  • 3-4 oz. wild-caught salmon steak
  • Juice of 1 whole lemon
  • 2 tbsp. of coconut oil
  •  Sea salt and pepper, if desired

 

 

Salad:

  • ½ red onion, diced
  • ½ avocado cut into pieces
  • ¼ cup mango cut into ¼ cubes
  • 2 tbsp. cilantro, chopped fine
  • 1 tbsp. fresh lime juice
  • 1 tbsp. capers
  • 1 tbsp. green chili, seeded and minced
  • ½ tbsp. garlic, macerated

Preparation: Heat oven to 350 degrees. Grease the bottom of a heavy baking pan or oven-safe skillet with coconut oil. Brush both sides of the salmon steak with lemon juice and place it in the baking dish or skillet. Sprinkle fish with salt and pepper if desired. Bake for 15-20 minutes or until moist and flakey. While the fish is cooking, prepare the salsa. In a medium bowl, mix the mango and avocado, onion, cilantro, capers and chili. In a small bowl, mix together the lime juice and the macerated garlic. Sprinkle the juice mixture over the salad and toss. Serve the salad on top of the baked fish. Makes one serving
